Since then, the head of the family has inherited the name of Shozaburo, and the current head is the eighth generation. The sake brewing that Eighth Generation Shozaburo aimed for takes pride in being local sake from Aomori Prefecture, and is particular about using rice and yeast produced in the prefecture. The water used for preparation is famous water from the Kanizawa area of Hachinohe City. It is filled with love for Aomori and Hachinohe.
The representative brand ``Mutsu Otokoyama'' is also known for being the first to register the ``Otokoyama'' brand, which can be seen throughout the country, as a trademark in 43. It has long been loved by local fishermen as the sake of the fishing town. In 1910, the brand ``Mutsu Hassen'', which represents the current Hachinohe Sake Brewery, was created. This sake was created with the hope that as many people as possible can enjoy it while valuing the sake brewing that is loved by locals. We use plenty of sake brewing rice "Hanafubuki" and "Hanamoi" grown under contract in the southern area of Aomori Prefecture. Of course, the water used for preparation is famous water from the Kanizawa area. While making full use of the traditional intuition and methods of Nambu chief brewers, he also learned from the latest in brewing science. They also took modern consumer tastes into consideration and practiced detailed and careful sake brewing. This passion was sublimated when ``Mutsu Hassen Daiginjo'' won the top prize in the 10 IWC (International Wine Challenge) SAKE category. Although there are many breweries in Aomori Prefecture, this was the first time the prefecture received this award, and it attracted a lot of attention. His younger brother, Managing Director Shinsuke Komai, works as the chief brewer and spends his days working together with young sake brewers to create new types of sake.
