Mazlu Beef Mian is a famous Lanzhou ramen restaurant in China that first opened two years ago. The stylish Chinoiserie restaurant, which doesn't look like a ramen restaurant, is very comfortable and is constantly visited by solo female customers. Lanzhou ramen is a very popular food in China. They are dotted all over the city, like the stand-up soba restaurants in Japan, and it is said that there are over 1 of them. It is a valuable food that satisfies the stomachs of ordinary people, mainly for breakfast and lunch.
The manager, Retsu Seino, couldn't forget the Lanzhou ramen he ate almost every day when he was a university student in Beijing, so he decided to open his own restaurant. He applied to become a disciple at Ma Zoroku, which he felt was the most delicious food in the area, but at first he was not accepted at all, but after visiting many times, his enthusiasm was recognized and he was finally allowed to train. This is because Ma Zilu is a long-established brand that has been offering Lanzhou beef noodles for over 100 years, and is so famous that it has been recognized by the Chinese government with the ``Chinese Laoji Name'', which is given only to famous restaurants. There, he was thoroughly trained in everything from making noodles to making soup and chili oil before returning to Japan.
Retsu Seino's love for Lanzhou ramen grew so much that he decided to open his own restaurant.
The soup made by simmering beef bones and meat is clearer than I expected and not cloudy.
Gansu Province, where Lanzhou beef noodles were born, is home to a variety of ethnic minorities in addition to the Hui Chinese who practice Islam, and they eat only halal food, which is permitted by Islam. In order to serve Lanzhou Beef Noodles from Mazilu, which was born in the area, it was necessary to use halal ingredients, just like in the original place, so this restaurant is also halal certified.
The main ingredient, beef, which has been slowly simmered to become tender, is complemented by the coriander and chili oil.
Only Lanzhou beef side is on the menu. The secret soup, made by simmering domestic beef meat and bones for a long time with more than 10 types of medicinal spices, is clearer than expected and has a soothing and gentle flavor. The flavor of the beef and the aroma of the complex spices that melt into the soup are sure to whet your appetite. Choose from nine types of noodles, including thin noodles, flat noodles, and triangular noodles. There is only one type of soup, but the taste varies considerably depending on the thickness and shape of the noodles. All of the various noodles are hand-made after an order is placed. The amazing, almost divine skill with which he performs is truly impressive.
The interior of the store has a stylish chinoiserie interior that is popular among women.
On top of the noodles are several slices of beef that have been simmered over several hours to make them soft, topped with plenty of coriander and garlic leaves, and topped with deliciously spicy homemade chili oil. At first, you taste the clear soup, and as you eat it, it gradually dissolves into the soup, allowing you to enjoy the change in taste. The soup, noodles, and meat are all made with great care, and the deep flavor of Lanzhou ramen is addictive and makes you want to come back again and again.
