Sakurai City in Nara Prefecture is said to be the birthplace of somen noodles, where the ``Miwa Somen'' that we often hear about is produced. Among them, ON TOKYO owner Aki Oto fell in love with Miwa Yamakatsu Seimen's somen noodles.
Typical somen is made by hand using flour, salt, water and cooking oil, but Miwa Yamakatsu Seimen's somen uses Yoshino kudzu without using any oil, and the salt is an original blend. Beautiful, delicious, and healthy somen noodles are produced using carefully selected ingredients and a special manufacturing method using sun-dried salt. ``ON TOKYO'' was opened by the owner, who discovered it while walking around and wanted as many people as possible to try it and learn about it. Starting with the restaurant's carefully selected menu, he told us that he has a passion for someday in the world to enjoy Japanese somen and Kansai soup stock.
