There is one item that I really wanted to introduce when I started this series. It's ``Stir-fried Nirasoba'' from the Chinese restaurant ``Toryu''.

 

 

``Toryu'' is a high-end Chinese restaurant with two locations in Kojimachi, Chiyoda Ward, and Azabu Juban, Minato Ward. We serve dishes from Shanghai, Sichuan, Guangdong, and Beijing. There are many stores like this in Japan, but from a Chinese perspective, what's the point? That's what it means. In China and Hong Kong, for example, Cantonese restaurants do not serve Peking duck (Peking cuisine) or mapo tofu (Sichuan cuisine). One store does not cross different regions. Such is the speciality (specialty) of regional cuisine.

“Toryu” is the pinnacle of the Japanese-Chinese world where you can find anything you want.

 

The cuisine at ``Toryu'' spans many regions, and the flavors are arranged with the Japanese palate in mind, so it should be called Japanese-Chinese. And I think it's the pinnacle of that. I must have been to the Kojimachi store 30 times over 200 years, including lunch. The older he gets, the more I like him.

 

 

Personally, I think you can't miss the ``unpairou'', ``hoikorou'', ``creamy Chinese cabbage'', ``sweet and sour pork'', and ``mabo tofu''. If you order a la carte, the price will be quite high, but if you eat soba for lunch, it will only cost you 2000 yen. However, the price is about double that of other ramen shops.

 

 

What attracts many customers for lunch here is the famous ``Tandanmen.'' Of course, it's one of the best in Japan, so if you like it, I don't mind if you try it. However, the one that I would like to highly recommend is ``Nilasoba''.

I want you to look at the photo first. This leek and wood ear mushroom (and a very small amount of onion) are wrapped in oil and are glossy! Just the beautiful green chives and stir-fried wood ear mushrooms on top of the noodles are so delicious that you'll be amazed. I'd love to know the secret to how you can stir-fry it so glossy. It's a soy sauce-flavored soup made with chicken and vegetables, and it has a deep flavor that can't be made overnight. The flavor, richness, and balance of salty and sweetness are the only way I can describe it. Slurping thin curly noodles with chives creates a synergistic effect of deliciousness. There's no doubt that you'll end up meowing like a sheep.



I think it's a great masterpiece. There is definitely no song, so I want you to try it at least once. It's amazing how the taste always stays the same no matter when and how many times you eat it. I once tried ordering ``chile soba'' at another famous restaurant, but both the fried chives and the soup were terrible. I was once so shocked by the difference in leftover that I didn't even eat half of it. After all, it's not easy to make delicious Nirasoba.

Also, the beautiful-looking ``Wonton Men'' is also delicious, so please try it after ``Nila Soba''. By the way, only during lunch time, they serve two shumai with plump shrimp and shark fin for 1000 yen (two spring rolls cost 1000 yen). Both the skin and the inside are soft and delicious, so I always order it. Lunch costs 3000 yen in total, but I don't go there every day.

 

 

Lastly, I would like to touch on service personnel. Throughout the year, the service provided by the group of men, dressed in dark suits and dark ties, is outstanding. The movement is brisk, and someone is always watching the customers and they notice them right away. Even cold tea will be added as soon as it's half full. We tend to think of Chinese restaurants as having sloppy and bad service. However, the Japanese-style service here at Toryu is probably the best in Japan in the Chinese food category, and I don't think anyone else can beat it.
