A limited-time shop for "JOCHU," a "third-generation Japanese sake" distilled using the unique patented "low-temperature purification" method, is open on the second basement floor of GINZA SIX until Monday, December 1, 2025. This is a rare opportunity to experience the clear, deep flavor that is different from both sake and shochu, right in the heart of Ginza.
"JOCHU" is a new type of Japanese sake that is distilled using a proprietary technique called "low-temperature purification®" that barely applies heat to pure rice sake, concentrating its aroma and flavor. Despite its 41% alcohol content, it is surprisingly smooth and has a delicate aftertaste, and its clear taste is so beautiful that it could be called "purified sake." Another appealing feature is that it ages over time and deepens in flavor.
This innovative liquor was created by Naorai Co., Ltd. in Hiroshima. The company collaborates with sake breweries across the country to produce a succession of locally produced jochu that utilizes the skills of the brewers and the local climate. In April 2025, they opened the Noto Jyoshujo in Nakanoto Town, Ishikawa Prefecture, which is attracting attention as a project supporting earthquake recovery.
The limited-time shop will have the entire lineup, including the Jōchu series made in Hiroshima's Jinseki Plateau and Noto, as well as "MIKADO LEMON Sparkling," which uses lemons from Mikata Island in the Setouchi region. At the adjacent bar counter, you can enjoy a tasting set of three types of Jōchu and Kohaku Jōchu, as well as the premium Jōchu series, from just 770 yen per glass.
