Collaboration between Shangri-La Tokyo and Noguchi Takahiko Research Institute

2025.4.8

An original sake is born in collaboration with a sake brewery that inherits the skills of the "god of sake brewing."

Shangri-La Tokyo has begun serving "Shangri-La Tokyo Original Sake," the first collaboration between a luxury hotel and Ishikawa Prefecture sake brewery, Noguchi Naohiko Laboratory. The sake can be enjoyed at Nadaman Japanese restaurant on the 29th floor and The Lobby Lounge on the 28th floor.

This collaboration began when the hotel staff at Shangri-La Tokyo fell in love with the sake made by the Noguchi Naohiko Laboratory, which inherits the techniques and philosophy of Noguchi Naohiko, one of the most important figures in the sake industry and known as the "god of sake brewing."

The "Shangri-La Tokyo Original Sake" was created through a unique blend of three types of sake from the Noguchi Naohiko Institute: Yamahai Daiginjo 2020, Yamahai Junmai Daiginjo 2020, and Yamahai Daiginjo 2021, which were carefully blended by the master brewer to create a drink that will bring out the flavor of the ingredients as an accompaniment to meals, and was then discussed and tasted by staff from Shangri-La Tokyo and the Noguchi Naohiko Institute. The sake is light on the palate, yet has a rich, concentrated flavor, with a pleasant bitterness and a crisp, dry aftertaste.

The label features Shangri-La, the legendary Chinese destination that was the setting for James Hilton's novel "Lost Horizon," along with the hotel's official logo.

In addition, within this year, two-go bottles (375ml) will be placed in the minibars of all guest rooms, allowing guests to enjoy the original sake whenever they like.
