The Nihonbashi main branch of Eitaro Sohonpo has introduced "THEO," an AI Baumkuchen craftsman developed by Juchheim, and has released "Anko Baumkuchen," a Japanese-style Baumkuchen filled with Eitaro's specialty red bean paste from Hokkaido and brown sugar from Okinawa Prefecture, and filled with brown syrup.
"THEO" uses AI to analyze and digitize the degree of doneness of each layer of dough baked by a craftsman, and can bake Baumkuchen at the same level as a craftsman without human intervention. It was developed over a period of about five years with the cooperation of various professionals, including Juchheim's skilled craftsmen, robotics researchers, AI experts, and designers.
The most important point in making the Japanese-style Baumkuchen "Anko Baumkuchen" is to add as much fresh bean paste as possible so that it does not get overwhelmed by the baumkuchen dough, while still bringing out the full flavor of the red beans. It is baked at a high temperature, so the balance and texture of the dough are carefully considered to prevent the flavor from escaping, and after many trial and error attempts, it was finally completed after two years. With one bite, the flavor of red beans spreads along with the aroma of eggs and butter, and the secret ingredient of brown sugar syrup brings it all together with a rich, deep flavor.
