Shake Shack Celebrates 10 Years in Japan! Reunited with Chef Zaisuke Hasegawa of "Den" for the First Time in 9 Years

New York-based hamburger restaurant Shake Shack will celebrate its 10th anniversary in Japan in November 2025. To commemorate this, the Gaien Icho Namiki branch in Tokyo will be offering a special collaboration menu with Chef Hasegawa Zaisuke of the two-star Michelin Japanese restaurant Den, available for two days only, on November 15th (Sat) and 16th (Sun).

 

 


This reunion marks the first time in nine years since Shake Shack's "DEN Shack" in 2016, and features the limited-edition "DEN Shack Smile Set," a four-item set that combines Shake Shack's classic American style with Chef Hasegawa's unique "playful spirit of Japanese cuisine." The set includes a special burger, "DEN Shack (10th Anniv.)," made with Japanese ingredients such as eel, sansho pepper, and Nara pickles, as well as a side dish, drink, and dessert, making it a one-course meal. Only 500 sets will be sold over the two days, priced at 5,500 yen (tax included).


Eel and beef, a blend of Japanese and Western flavors in a special 10th anniversary bite

 

The main dish, "Den Shack (10th Anniv.)," is a 100% hormone-free Angus beef patty topped with fragrant grilled eel. It features a deep flavor that is woven together with rich cheddar cheese, chopped Nara pickles, the bitterness of Selvatico, and a homemade sauce with a hint of Japanese pepper.

 

Chef Hasegawa has recreated the combination of "eel and meat," which is popular overseas, with a Japanese sensibility. The harmony of seafood and meat, which naturally blends together on the dinner table every day, is expressed anew in the form of a burger.

 

 




A limited-edition set of four dishes to be enjoyed as a course meal

 

This collaboration includes a set of three special menu items in addition to the burger.

 

The beef cheek and blue cheese fries are rich fries topped with sweet and spicy stewed beef cheek. The creamy cheese sauce and the aroma of blue cheese combine to create a nostalgic yet fresh flavor reminiscent of "nikujaga" (meat and potato stew).

 






Tsuyuhikari Fifty Fifty is a 50:50 blend of Tsuyuhikari, a Japanese tea also served at Den locations, and Shake Shack's popular lemonade. The mellowness of the green tea and the tartness of the lemon create an exquisite harmony, leaving a pleasantly refreshing feeling even after a meal.




Fermented Bread Chocolat Concrete is a frozen dessert topped with fragrant fermented bread chocolate. It has a soft aroma of clove-scented roasted green tea powder and a deep bitter and sweet flavor.

 





Chef Hasegawa Zaisuke: "An unprecedented new burger made with eel"

 

Chef Hasegawa, who says he is a personal fan of Shake Shack, said, "I'm happy to be approached about collaborating with Shake Shack again, and I want to make this an initiative that will excite not only our customers but also our staff." Recalling his experience at DEN Shack nine years ago, he said that this time, he developed the burger with the theme of "a new, never-before-seen burger."

 

"I was conscious of creating a taste that is reminiscent of Japanese cuisine and somehow nostalgic. The main dish, eel, can be grilled in sauce or smoked and paired with meat dishes. I focused on how well it pairs with beef patties, and added the aroma of Japanese pepper as an accent. Hamburgers are a free and fun food. I hope you will enjoy them casually and in a hearty manner."

 



Special benefits available only to customers who visit the store or make a purchase

 

Limited-quantity special benefits will also be available during the commemorative collaboration period. Customers who purchase the chef collaboration set will receive one of the non-sale "10th anniversary original stickers" at random, and customers who bring their pet dog will receive an "original dog biscuit" inspired by Chef Hasegawa's pet dog, "Petit Jr." Both are limited in quantity, so we recommend coming to the store early.
